Mix together:
1 cup GF flour
1 tsp. xanthan gum
1/2 tsp. baking soda
1/2 tsp. salt
In a separate bowl, cream together:
1/2 cup palm shortening
1/4 cup brown sugar
1/4 cup sugar
1 egg (or flax egg)
1 tsp. vanilla
Combine wet and dry ingredients, mix well and then add:
1/2 cup chocolate chips
Bake at 375* for 10 min.
